What part do I change on my water heater for more stable hot water?

I have a water softener attached to my water heater and was told that the salt from the water softener might cause something to go out on the water heater. I can’t remember what part they said might go out, but it’s because the salt corrodes that part. Does anyone know what that part might be called? Sometimes my water is almost scalding hot and sometimes I don’t have any hot water. My water heater doesn’t seem to be able to regulate the temperature – so I think I need to replace that part. Any suggestions?
We have a gas water heater. I don’t know anything about how or if salt is getting into the water heater. I just know that I was told that because of the water softener, something (the part) would go out and have to be replaced.

    The tmperature sesing probe which is not expensive the old one and replacement is faulty easily checked with continuity meter and one and replacement is faulty easily checked with continuity.
